Sourced from the highlands of Chiapas, Mexico, this swiss water process is collected by smallholder farmers growing traditional Arabica varieties to the region. 100% chemical free decaffeination, the Swiss Water method removes 99.9% of caffeine through soaking the green coffee in a caffeine-free coffee extract which allows the molecules to migrate out of the seed without removing most of the original flavour potential. Great to work with in a cafe environment as it has great crema and body.
